Tannie Marie's Health Rusks



Makes: 2.5 oven trays of rusks


• 8 cups Nutty Wheat • 4.5 cups Self raising Flour • 3 cups Allbran Flakes • 2 cups brown sugar • 650g Margarine or Butter • 4 tbs Baking Soda • 2 tsp Salt • 1 liter Buttermilk • 1/2 cup Raisins

Preheat the oven to 180°C.

Sift self raising flour, baking soda and salt together. Rub in margarine with Nutty Wheat, then add the Allbran Flakes and brown sugar. Mix in the buttermilk and lastly add the raisins. (For a recipe variation take the Allbran and raisins = 3.5 cups and make a mix of Allbran, raisins, coconut and seeds = 3.5 cups.)

Divide the batter into two nonstick or sprayed oven trays and bake for 180°C for 45min. Remove from the oven, let it cool and then cut into the desired size. Place back on the baking trays, stack them very loosely and at an angle, one row supporting the next and dry overnight in a cool oven.
